In recent years, food-associated diseases have raised major concerns and the current populations are exposed to well-known health hazards. The application of lipases in the food and feed industries has many advantages and advantages over other methods and enzyme systems (as reviewed by Kookana and Senthil Kumar 2010). Hence, lipases are widely used in the production of food additives and fine chemicals. The versatility of these enzymes enable to convert various food components (fatty acids, oils and oils derived fractions, acylglycerols, waxes) into important agrochemicals and nutritive substances (Chang et al 2008; Kookana and Senthil Kumar 2010). The wide distribution of lipases in nature, biodegradation of oils in commercial environments by lipase-catalyzed hydrolysis of triglycerides, and the effects of lipases on structural stability and functional properties of lipids have been reported (Kookana and Senthil Kumar 2010). Understanding the physiological functions of lipases in nature and its extracellular accumulation in food sources, the application of lipases in commercial uses and their inactivation have been summarized by various authors (Kookana and Senthil Kumar 2010; Teixeira and Dias 2010). Lipases are versatile biocatalysts with broad substrate specificity, high catalytic efficiency, thermostability, substrate tolerance and salinity tolerance. Thus, they are well adapted to hydrolyze oils and fats present in animal, vegetable and microbial sources, and are used in the manufacture of biodegradable materials, biofuels, cosmetics, bio-polymers, food additives, detergents and pharmaceuticals.
