Marine products (drinkable, canned and fresh) are becoming increasingly important to the human diet. This has posed a challenge to the food industry to find ways to evaluate freshness and aroma in order to improve product quality. The objective of this study was to evaluate the aroma, freshness, and naturalness attributes of Pan fried shrimp in the Los Angeles, California area and to compare this type of production to the current processing method. The shrimp was provided by three local grocery store chains, two of which manufactured the shrimp. The participating participants were trained sensory panelists. Aroma and freshness attributes were evaluated using the sensory panel. Naturalness attributes were estimated by calculating the ratio of antioxidant activity and fatty acid composition. The sensory panel evaluated aroma (7.08) and freshness (6.15) attributes were judged to be better for the pan fried shrimp compared with the canned shrimp. In addition, the naturalness attributes of pan fried shrimp ranked as the highest. With respect to naturalness, pan frying the shrimp resulted in an increase of EPA, DHA, and nutritionally important fatty acids which increased the naturalness attribute. From a sensory perspective, pan fried shrimp had better aroma, freshness, and naturalness compared with canned shrimp. In conclusion, Pan frying is an appropriate processing method to produce fresh seafood that meets the quality and naturalness of shrimp.Q:
