To improve consumption and consumer acceptability of these products, the addition of nitrate to other ingredients should be considered. To explore the utilization of retail meat bygoudi and kool meatballs and the effect of addition of nitrate in kool meatballs on consumer acceptability. Twelve retail meat products containing red meat were identified. Visual, sensory, microbiological and biochemical parameters were assessed in these products. Formulations containing retail red meat were roasted to improve their sensory and physicochemical properties. The addition of nitrate-rich kool from roasting of sausage was used for the preparation of kool meatballs. Kool meatballs were tested for their color, texture and overall acceptability to consumers. The addition of nitrate-rich kool meat increased the perceived tenderness, odor and color of kool meatballs. Formulations containing retail meat products were roasted to improve their sensory and physicochemical properties.
